Following up with her first collaboration with Thierry Costes’ establishment Le Germain, India Madhavi worked on Thoumieux a second commission that involved a hotel concept this time along with a Michelin starred restaurant.
Madhavi had worked closely with former Thoumieux’s chef Jean-François Piège who supervised the opening before handing it over to chef Sylvestre Wahid. The rue Saint Dominique’s famous brasserie had added a starred restaurant to its initial offer and a niche hotel run in the manner of a private mansion, touched with Madhavi’s genius neo-baroque, animal, warmly coloured style.
An in between mediterranean and mineral threads, Sylvestre Wahid’s cuisine reflects his Franco-Pakistani background and a childhood spent in the South of France. Later learning his trade alongside chef Thierry Marx and Alain Ducasse in New York, also supervising L’Oustau de Beaumanière two-stars in Les Baux de Provence.
